สูตรอาหาร – ไก่ตอน ไหหลำ
จานเด่นเมนูไหหลำ ข้าวมันหอม เนื้อไก่ นุ่มลิ้น

น้ำจิ้มเข้มข้นทั้งขิงและเต้าเจียว

ส่วนผสม ไก่ตอน ไหหลำ (สำหรับ 1- 2 ที่)

ไก่ตอน 1 ตัว ขิงหั่นแว่น 1 แง่ง เกลือป่น 3-4 ช้อนโต๊ะ น้ำ 3-4 ถ้วย

เครื่องปรุงน้ำจิ้มเต้าเจียว

เต้าเจียว 2 ช้อนโต๊ะ พริกขี้หนูซอย 5 เมล็ด ขิงสับ 2 ช้อนโต๊ะ น้ำตาลทราย

1/4 ช้อนชา

เครื่องปรุงน้ำจิ้มขิงสับ

ขิงสับละเอียด 4 ช้อนโต๊ เกลือ 1 ช้อนชา น้ำมันงา 3 ช้อนโต๊ะ

วิธีทำไก่ตอน ไหหลำ

1.ล้างไก่แล้วพักให้สะเด็ดน้ำ อาจใช้ผ้าซับผิวให้แห้งแล้วใช้เกลือป่นทาให้ทั่ว ใส่ลงในหม้อน้ำที่กำลังเดือดจัด เมื่อน้ำเดือดอีกครั้งให้ใส่น้ำแข็งก้อนสัก3-4ก้อนลงไป และทำแบบนี้ทุกครั้งที่น้ำเริ่มเดือดจนไก่สุก

2.ยกไก่ขึ้นจากหม้อพักให้สะเด็ดน้ำ และควรทาหนังไก่ด้วยน้ำมันเพื่อไม่ให้ หนังไก่แห้ง ส่วนน้ำซุบไก่นำไปหุงข้าวได้ จากนั้นหั่นเนื้อไก่เสิร์ฟพร้อมน้ำ จิ้มเต้าเจียวละน้ำจิ้มขิงสับตามชอบ
